Harvest Monday: October 31, 2011

Each Monday, Daphne’s Dandelions hosts “Harvest Monday” where everyone can share links to their garden yield for the week. It’s fun to see what everyone is harvesting each week and how they are enjoying their homegrown produce.

A few Leeks and Green Onions were reserved to use this week, but the remaining were chopped and frozen:

Leeks

Leeks - The largest was 3-inches wide, but most were around 1-inch.

Green Onions

Some sage was frozen whole to be used in stuffing, roasts, and stews over the winter months:

Thyme was gathered into bunches, wrapped with a rubber band around the stems, and hung to dry near the wood stove:

  1. I'm glad you posted about preserving the herbs. I've tried various methods for mine this year and finally ended up freezing a lot of them. I never thought to do sage--have you tried this before?

  2. I didn't realise that sage froze well - as I have just managed to kill my sage plant I will need to replace it before trying this but its still good to know.... I do like the look of those leeks.

  3. Nice looking bunch of leeks and green onions. My leeks never quite make it to the fat thickness of the store varieties, but they always produce well and taste great! Good tip on freezing the sage.

  4. I freeze the green part of leeks and use to flavor stock but never thought of freezing the white parts thanks for the tip. Will be harvesting my leeks once the snow melts away and I can get into my garden, hopefully sometime this week.

  5. Have never grown leeks. Not sure I have along enough growing season. Love them for potato leek soup.

    Have you ever tried freezing you thyme? read an article that you put it in the freezer stem and all for about a week or so in a ziploc, then take it out and roll over it with a rolling pin while still in the bag and all the leaves fall off can you can put it back in the freeze without the stems.

  7. Your leeks look great! I still have some in the garden and also some in the freezer. I am hoping to harvest a bit more herbs for drying....as soon as the snow melts!!

  8. That's a great idea for the sage leaves. I've got to try it.. next year, my sage got suffocated my mint and basil this year!

  11. Sue: Yes, I have frozen sage before. Freeing seems to make the flavor stronger, so you can use less. I wash the leaves and let them dry on a kitchen towel. Then pack them loosely in zipper bags, suck out the excess air with a straw, and stick them in the freezer. That way you can take out as many leaves as you need.

    Liz: I have tried drying sage and it is ok in flavor, but freezing seems to enhance the flavor.

    Laura: It was my first time growing leeks. Like most homegrown produce, they taste much better fresh no matter what size.

    Norma Chang: I saved the green parts of the leeks for stock too. I have a zipper freezer bag in the freezer that I add bits of this and that until I am ready to make the stock. I hope your snow mealts soon.

    Wilderness: This is the first time growing leeks. I started the seeds under lights in early March and they were transplanted out at the end of April. I will try to start them earlier this year.

    I have never tried freezing thyme but I bet doing so would keep the flavor better than drying it. Thanks for the tip, I will try it next time.

    Barbie: Yes, but the wait will be worth it :)

    Robin: I was thinking of leaving the leeks in the garden over the winter, but decided to harvest them before the snowstorm. I usually grow herbs on a windowsill during the winter, but I haven't seeded them yet. The dried herbs will have to get me by for now.

  13. Nice onions. I picked mine too, but I forgot and left them outside...don't know if they are still good. Maybe I'll get around to checking on them! Nice thyme too. I dried a bunch recently too and there is still a bunch out in the garden!

  14. Your leeks and onions look so bright and fresh. We have 3 or 4 leeks left to gather. They're tiny by comparison.

    Jody:Some of the leeks were pretty tiny, only about 1 inch across. I'm going to try to start them earlier this year and see if that makes a difference.

  17. I found you through Daphne's Harvest Monday. Since I live in the desert and have mild winters I can pick some herbs all year long, in fact the rosemary grows more with the winter rain, it sort of goes dormant in the summer when it is really dry. Your leeks look yummy; I'm still trying to get my alkaline clay soil to the point it will grow decent alliums.
